Cafe Ybor is owned by Mike and Eunice Coughlin who came to Texas all the way from Florida in 2014! Cafe Ybor food truck is themed after Ybor City near Tampa, Florida and features their authentic take on the cuban sandwich which is as popular in Florida as a taco is in Texas! Mike has over 40 years in the restaurant business and has a great instinct for putting flavors together in the other unique sandwich creations, salads and desserts that are available. Many folks from Belterra and Highpointe are probably already familiar with Cafe Ybor's menu since they are frequently scheduled at the neighborhood food truck events. Stay tuned for a new menu coming up in the fall that will make it possible for customers to create their own sandwich in addition to our signature items. For now, hours will be 4-7:30pm Mon - Fri and 11a-7:30pm Sat. Call ahead to place your order at 352-339-2835.
Cheryl Skinner, Dripping Springs native, is the owner/operator of The Wax Shack and we're so happy to host her beautiful vintage argosy airstream complete with a hanging chandelier and retro furnishings. She did a fantastic job fixing up her rig and she's even greater at what she does for a living. Cheryl is a licensed cosmetologist who specializes in organic spray tanning, facials with natural products and waxing. She's got a long list of areas you can have waxed all for an affordable price while keeping you comfortable. www.austinwaxshack.com
Simpson's BBQ - A Family Tradition is just that, run by father-son team, Larry Sr. and Larry Jr. (Larry squared as we lovingly call them). They're serving up some great meats like brisket, pork ribs, sausage along with borracho beans and cole slaw and sweet treats. You'll find them in the summer months Thursday through Saturday from 8am to 6:30pm or whenever the goodness runs out. And be sure to try out the Cowboy Breakfast Sandwich with your choice of meat on Texas toast with a fried egg and optional cheese, peppers and onions. Mmmmm. Yum.
We're so happy to welcome Siria and John, operators of Tia's Kitchen. Wednesday was their first day open and they have been hard at work to bring you some very delicious Mexican food. Everything is amazing. Siria makes her own handmade tortillas daily while John is working hard at the pit smoking pork, brisket and chicken. Look for tacos, enchiladas along with quesadillas and rice and beans. Plus- vegetarian options too!! So, bring your friends and family and have some fun at Cedar Valley Eats.
Ahh! The time has finally come and we're ready to start accepting food trucks and trailers! Yeeehaww!
We apologize for the year delay and it's been one hell of a year. This will be our 3rd business up and running and now we're having a baby in October. Can someone say "perfect timing"? Hey-guess who won't have to cook when we get some awesome food here at CV Eats.
So, here's the rundown on what we've got, are getting and what we're looking for:
4 Sites available
50 AMP hookups
Electric (individual meter paid by tenant)
Tables, Trash cans, Dumpster and Lighting provided by owner
Fun & Games available for our patrons with onsite parking
Sorry, no on-site dump, but we do have a friend who can come pump your tank at tenant's expense
We're really looking for long-term tenants who can build their reputation here with patrons in surrounding neighborhoods (we have lots!). And, living in the wedding capital of Texas, we have the potential to host private parties where tenants would have catering opportunities! Score!
So, contact us if you have interest and would like to see our venue. We look forward to it!

My husband and I are both entrepreneurs. We are passionate for supporting like-minded trailblazers who provide for their families by creating something truly special to share with others.
We have both become huge fans of food trucks/trailers serving up delightful, delicious and sometimes even super healthy treats always made with love and served with a smile. I can remember one experience where I overheard a proprietor delivering a delicious looking monte cristo sandwich to his patrons. You would've thought he was a 5-star chef the way he described and presented his wonderful creation in full detail with such delicate plating. So much passion! (The foodies seemed delighted with their choice.)
So, here's the skinny. We are building a family friendly hangout hosting up to 4 food truck/trailers. We'll have a super awesome and safe playground for the littles, washer pits and other games for those looking for a healthy round of competition and lots of seating to hang while noshing on some amazing grub.
We're located in Cedar Valley, Texas (that's the little slice of heaven between Austin & Dripping Springs) and we could use your help to make this happen. The up-front costs include electrical, fencing, widening of the entrance, materials for parking, tables/seating, a playground and the best port-a-potties we can find with hand washing stations. We're minimalists. Quality over quantity, right?
We truly want to create a place where neighbors can come together in community and for visitors traveling through to discover our not-so-secret food pleasure destination.
While we're working and saving to make this dream happen, we've set up a FUN-draiser selling T-Shirts to promote our love for Cedar Valley and the awesome food destination we're to become. It's simple! Buy a t-shirt and tell your friends. It's just that easy and you'll look super fly wearing your sweet Tee.
You can share with your friends and family via email, Facebook and Twitter!
